She gives the apples one last stir and
slowly pours them on top of the bottom
crust. The heaping mound is huge. "I don't
bake flat pies," Colson says.
Colson expertly tops the pie off and
pinches a large crust. She then rips strips
of tinfoil and covers the edges of the pie.
"Why make a perfectly good pie with
a burnt crust?" Natalie uses the huge
wooden rolling pin to roll out some extra
dough, while Lydia eats hers with the left-
over apple slices that didn't fit into the pie.
It's clear they love cooking with mom.
"We always bake on the weekends,"
Colson says. "Sometimes it's pie, but most-
ly it's cookies. Chocolate chip are one of
our favorites."
Forty minutes later, the pie is done
and it's impeccable. The smell of warm
apples mixed with sugar and spices fills
the air--a fitting aroma for a day that al-
ready feels like a special occasion.
